I personally wonder why they seem adamantly against a Godzilla ride in the states - there's even a GxK ride of some sort coming overseas. Maybe there's some strange copyright confusion? You'd think they could port one of these screen rides over, especially since Minus was such a huge deal

I don’t think anyone is pretending these side things are more important than they are. You can compare the hype and interest around all these small side projects to the hype leading up to any of the actual movies.
I’m surprised you/other people are complaining or taking a stance on this. I’d rather Toho puts out a movie every couple years with much more effort put into than the old “back to back yearly releases” that really dented the franchise. The “side content” is very clearly intended to keep the franchise interesting for crazy fans, and satisfy some of the desires that various aspects of the community want. And, while I have no care for various things like Chibi Godzilla, it’s pretty clear Toho is casting a wide net. You don’t have to engage with any of this.
Right now Godzilla Galactic Odyssey has 3 issues, with a fourth one this week. Is is the best thing ever? Hard to say, probably not, but so far it’s entertaining. It has a special place in my heart already for actually being the first manga I’ve purchased regularly physically and am excited by its biweekly releases. I’m sure that’s how other fans feel about other little aspects of the franchise that I’m personally not excited for now.
In same same way you were excited for some bootleg of a Heisei film back in the 90s, let people be excited and experience having actual things come out that are contemporary, for better and worse.

This ride is coming to the states though. I heard Godzilla's theme park rights might be holed up with another company for Florida.
